Almond Toffee

Ingredients:

2 cups sliced almonds

2 Tablespoons light corn syrup

1 cup sugar

1 cup butter, softened, plus two additional tablespoons for greasing

Directions:

  • Line 13x9 inch pan with foil and grease using 1 Tablespoon butter
  • Grease heavy saucepan using 1 Tablespoon butter
  • In saucepan, combine butter, sugar, and corn syrup
  • Bring to boil over medium-high heat, stirring constantly. Cook until golden brown, usually 3-4 minutes.
  • Remove from heat.
  • Stir in almonds, then spread in 13x9 inch pan and smooth with spatula
  • Place pan in refrigerator until toffee is firm
  • Break into pieces to serve
