Banana Nut Bread

Ingredients:

1 cup sugar

1/2 teaspoon salt

1/2 cup soft margarine

2 eggs

2 1/2 cups flour

1 teaspoon baking powder

1 1/4 teaspoon baking soda

1/4 teaspoon nutmeg

1 cup mashed ripened bananas

1/2 cup buttermilk

1 cup chopped pecans or walnuts

Directions:

  • Preheat oven to 350° F
  • Cream sugar, salt and butter thoroughly in large bowl
  • Beat eggs into mixture, one at a time, until light and fluffy
  • In a second bowl, sift together flour, baking powder, baking soda and nutmeg
  • In a third bowl, Combine bananas and milk
  • Alternate between adding the dry ingredients and the banana mixture to the butter mixture, blending well after each addition
  • Add nuts and mix briefly
  • Turn batter into greased 9x5 loaf pan
  • Bake at 350° F about 75 to 80 minutes or until pick comes out clean
  • Turn out loaf on cooling rack
  • Recipe doubles well
