Cashew Chicken
Ingredients:
2 boneless chicken breasts, cubed
2 stalks of celery, diced
1/2 green pepper, diced
1 can whole water chestnuts, drained
1 can bamboo shoots, drained
1 cup mushrooms, sliced
1/2 cup cashew halves
1 Tablespoon minced onion
3/4 cup water
1/4 cup soy sauce
1 Tablespoon cornstarch
Peanut oil as directed
Directions:
- Mix water, soy sauce and cornstarch; set aside
- Stir fry cashews for 1 minute; set aside
- Place 1 Tablespoon peanut oil in wok on medium high heat
- When hot, place celery in wok and stir fry 1 minute
- Add mushrooms and stir fry for 2 minutes
- Add 2 Tablespoons of peanut oil and stir fry chicken, cooking for 4-5 minutes until
tender and done
- When chicken is done, add water chestnuts, bamboo shoots and onion
- Add water, soy sauce and cornstarch mixture, cooking until thick
- Top with cashews, serve over rice
