Cashew Chicken

Ingredients:

2 boneless chicken breasts, cubed
2 stalks of celery, diced
1/2 green pepper, diced

1 can whole water chestnuts, drained

1 can bamboo shoots, drained
1 cup mushrooms, sliced
1/2 cup cashew halves

1 Tablespoon minced onion

3/4 cup water

1/4 cup soy sauce

1 Tablespoon cornstarch

Peanut oil as directed

Directions:

  1. Mix water, soy sauce and cornstarch; set aside
  2. Stir fry cashews for 1 minute; set aside
  3. Place 1 Tablespoon peanut oil in wok on medium high heat
  4. When hot, place celery in wok and stir fry 1 minute
  5. Add mushrooms and stir fry for 2 minutes
  6. Add 2 Tablespoons of peanut oil and stir fry chicken, cooking for 4-5 minutes until tender and done
  7. When chicken is done, add water chestnuts, bamboo shoots and onion
  8. Add water, soy sauce and cornstarch mixture, cooking until thick
  9. Top with cashews, serve over rice
