Cranberry Salad

Ingredients:

1 pound cranberries, ground
2 cups sugar
2 cups boiling water
2 small boxes of cherry gelatin
1 15 1/4 ounce can crushed pineapple, drained
1/2 cups walnuts or other nuts, chopped
2 or 3 apples, chopped or grated

Directions:

  1. Grind cranberries in food processor
  2. Mix ground cranberries and sugar in large bowl.  Let stand several hours.
  3. In a separate bowl, dissolve gelatin in boiling water
  4. Cool to room temperature, then add gelatin to cranberries
  5. Add pineapple, nuts and chopped apples
  6. Place in refrigerator until set

Keeps well several days.
