Fluffy Frosting

Ingredients:

1 1/2 cups sugar

1/8 teaspoon cream of tartar

1/2 teaspoon salt

2 egg whites

1/3 cup water

1 teaspoon vanilla

Directions:

• Combine all ingredients except vanilla in top of double boiler
• Place over boiling water and beat about 7 minutes with rotary beater or electric mixer until frosting holds stiff peaks.
• Mix in vanilla

Goes well on top of Apple Butter Cake!
