Kolachie

Kolachie was a recipe that I found in the Encyclopedia of Cookery that I bought one book at a time from Kroger. I don't necessarily make them for Christmas, but that is usually when the lemons are really good. They are better fresh. They seem to loose something after they sit around awhile. So if you make these, try to make them sometime when you have company for breakfast. Company usually comes with Christmas. They are good around Easter, too.

Ingredients for Cookie

1 package dry yeast
2 Tablespoons warm water
4 cups flour
1/4 cup sugar
1 teaspoon salt
1 teaspoon grated lemon rind
3/4 cup butter or margarine at room temperature
3 egg yolks
1 cup heavy cream or canned milk
Fruit Jam for filling

Ingredients for Frosting

1 Tablespoon boiling water
1/2 teaspoon lemon juice
3/4 cup confectioner's sugar

Directions

  • Sprinkle yeast into water.
  • Sift flour with sugar and salt.
  • Add grated lemon rind and yeast; blend in butter.
  • Beat egg yolks and add cream; combine with flour mixture.
  • Blend well. Cover and refrigerate overnight.
  • Knead several times and roll on floured board to 1/4 inch thickness.
  • Cut with two-inch round cutter and place rounds on ungreased cookie sheets.
  • Cover and let rise in warm place until doubled in bulk (approximately 1 hour).
  • Make a depression in the center of each. Fill with jam.
  • Bake in 375 degree oven for 10 minutes.
  • Frost while warm.
