Lentil Pottage

Ingredients:

1 1/2 cup lentils
2 teaspoons salt
2 cups onion, coarsely chopped
1 teaspoon olive oil
3/4 cups white rice
1 1/2 tablespoons butter or margarine

Directions:

  1. In the morning, soak lentils in cold water
  2. About 1 hour before serving, drain off water and place lentils in a large pot
  3. Add 4 cups cold water and 1 teaspoon salt, bringing to boil
  4. Reduce heat and simmer, stirring occasionally
  5. Meanwhile, sauté onions and 1 teaspoon salt in olive oil until soft and yellow.   Add to lentil mixture
  6. Wash rice, then drain and parch in 1 1/2 tablespoons butter
  7. Add to lentil mixture with enough hot water (perhaps two cups) to finish cooking rice

Serve with white flour tortillas.
