1 1/2 cups sugar
1 cup margarine or butter, softened
1 1/2 cups flour
1 teaspoon baking soda
1 teaspoon ground cinnamon
1 teaspoon vanilla extract
1/2 teaspoon salt
2 large eggs
1 cup dark seedless raisins
3 cups quick cooking oats
3/4 cup walnuts, chopped
2 cups McIntosh apples, peeled, cored and diced
Directions:
In large bowl, with mixer at medium speed, beat sugar and margarine until light and
fluffy; about 5 minutes
Add flour, baking soda, cinnamon, vanilla, salt, and eggs; beat just until blended
With spoon, stir in apples, oatmeal, raisins, and walnuts
Preheat oven to 350° F
Drop batter on 2 large ungreased cookie sheets
Place cookie sheets on 2 oven racks. Bake cookies 20 to 25 minutes until golden,
rotating cookie sheets between upper and lower racks halfway through baking time.
