Pumpkin Roll

Ingredients:

3 eggs
2/3 cups pumpkin
1 cup sugar
3/4 cups flour
1 teaspoon baking soda

Directions:

  1. Mix together first three ingredients
  2. Add next three ingredients
  3. Grease and line jelly roll pan (10x15x1/2) with wax paper
  4. Grease wax paper
  5. Pour mixture into pan
  6. Sprinkle batter with 1/2 cup chopped walnuts or pecans
  7. Bake 15 minutes at 375°F
  8. Turn out onto cloth which is well-covered with powdered sugar
  9. Leaving paper on, roll up like jellyroll
  10. Cool Completely

Ingredients for filling:

2 Tablespoons margarine
8 ounces cream cheese
3/4 teaspoon vanilla
1 cup powdered sugar

Directions for filling:

  1. Beat ingredients together
  2. Carefully unroll cake and spread with filling
  3. Chill well
  4. Slice into 1/2 inch slices

Freezes well
