Pumpkin Roll
Ingredients:
3 eggs
2/3 cups pumpkin
1 cup sugar
3/4 cups flour
1 teaspoon baking soda
Directions:
- Mix together first three ingredients
- Add next three ingredients
- Grease and line jelly roll pan (10x15x1/2) with wax paper
- Grease wax paper
- Pour mixture into pan
- Sprinkle batter with 1/2 cup chopped walnuts or pecans
- Bake 15 minutes at 375°F
- Turn out onto cloth which is well-covered with powdered sugar
- Leaving paper on, roll up like jellyroll
- Cool Completely
Ingredients for filling:
2 Tablespoons margarine
8 ounces cream cheese
3/4 teaspoon vanilla
1 cup powdered sugar
Directions for filling:
- Beat ingredients together
- Carefully unroll cake and spread with filling
- Chill well
- Slice into 1/2 inch slices
Freezes well
