Sweet Potato Casserole

Casserole:

3 cups sweet potatoes

1/2 cup soft margarine

1/2 cup milk

1 cup granulated sugar

2 eggs, beaten

1 teaspoon vanilla

Topping:

1 cup brown sugar

1/3 cup flour

1/3 cup margarine

1 cup chopped nuts

Directions:

  • Preheat oven to 350° F
  • Beat casserole ingredients together; pour into buttered casserole dish
  • For topping, crumble brown sugar, flour and margarine ingredients together with fork or pastry cutter.
  • Place topping over potato mixture.
  • Sprinkle 1 cup chopped nuts over topping
  • Bake at 350° F for 30 minutes or until bubbly
